Preheat oven to 375°F. Line 12 muffin cups with paper liners; set aside.
Using electric mixer, beat butter and sugar until light and fluffy. Add eggs, one at a time, until fully incorporated; add vanilla.
In bowl, mix together flour, baking powder, ginger and salt; stir into egg mixture alternately with milk, making three additions of flour mixture and two of milk, just until combined (do not overmix). Fold in lime zest.
Scoop batter evenly into prepared muffin cups; bake for 20 to 25 minutes or until tester inserted into center comes out clean.
Using handle of wooden spoon, punch hole into middle of each muffin; fill with Dragon Fruit until overflowing. (Decorate the muffins with Dragon Fruit leaves if desired.)
Tip: Add even more tropical flavor by replacing the milk with coconut milk and/or butter with coconut oil.
