Baked Boniato and Malangas with Maple
A recipe that will have your guests thanking you for the rest of the year.
2 pcs boniato
2 pcs malanga
2 Tbsp. olive oil
1 Tbsp. salt
1 Tsp black pepper
1/4 cup maple syrup
1) Pre-heat oven to 350F.
2) Peel and cut boniato and malanga in 3/4 inch pieces.
3) In a bowl, mix the tropicals with olive oil, salt and pepper.
4) Cook in oven for 25-30 minutes turning them every 5 minutes. You will know they are ready when you pinch them with a fork and they are soft inside.
5) Put maple syrup into a bowl. Once tropicals are ready, toss them in maple syrup and it is ready to serve.
