Tropical Dragon Fruit Smoothie Bowl

INGREDIENTS

SMOOTHIE BOWLS

  • 2 packs frozen dragon fruit
  • 1/2 cup frozen raspberries or other fruit of choice
  • 2 frozen bananas
  • 3 Tbsp vegan vanilla protein powder
  • 1/3 cup dairy-free milk

TOPPINGS (optional)

  • Granola
  • Coconut flakes
  • Hemp seeds

DIRECTIONS

  1. To a high-speed blender, add frozen dragon fruit, frozen raspberries, banana, protein powder, and dairy-free milk (starting with lower end of range).
  2. Blend until creamy and smooth. The trick to a thick smoothie bowl is being patient and blending slowly, adding only as much liquid as necessary, and using a smoothie wand (or something comparable that’s blender-safe) to scrape the sides down as it blends.
  3. Taste and adjust flavor as needed, adding more banana for sweetness, dairy-free milk for creaminess, or berries for more intense berry flavor.
  4. Divide between serving bowls and enjoy as is or top with fruit, granola, hemp seeds, and coconut flakes (optional), and enjoy!

*Chef’s Note:

Make your own frozen fruit! Place your leftovers in a sealed bag, add a slice of banana and dragon fruit, and place in the freezer. Remove when ready to make a smoothie bowl!

Chef’s Tip:

Replace the milk with 1 cup fresh pineapple to make it sweeter and even more tropical!
