Dragon Fruit Green Salad
The type of salad that sounds so interesting you would even order it at a restaurant.

1 white dragon fruit
⅓ cup Greek yogurt
2 Tbsp mayonnaise
½ lemon
1 Tbsp honey
1 thumb-size ginger
½ tsp salt
2 oz. cherry tomatoes
1 bunch cilantro
1 ¼ cup cashews
1 lettuce
DIRECTIONS
1) In a bowl, juice the lemon, grate the ginger, and mix them with the mayonnaise, yogurt, honey, and salt to make the dressing.
2) Peel and cut the dragon fruit in ¾ inch cubes and chop the lettuce roughly.
3) Garnish with cashews and chopped cilantro and enjoy!
*Chef’s Note:
After cutting the dragon fruit, sprinkle tajin seasoning to give it a spicy yet refreshing taste.
