Dragon Fruit Guacamole with Plantain Chips
Bringing the dragon fruit in the Guacamole is not only creative and delicious but will also make it lighter and healthier.

For the Guacamole
1 pc dragon fruit
1 pc avocado
1/2 pc lemon
1/8 pc papaya
1 tsp salt
1 small bunch cilantro
For the Plantain Chips
1 pc plantain
1 cup frying oil
1 Tsp salt
DIRECTIONS
Guacamole:
1) Peel and scoop avocado into a bowl.
2) Chop cilantro very thinly.
3) Peel and cut dragon fruit into small cubes.
4) Add the juice of 1/2 lemon, salt, papaya and cilantro to avocado and whisk together.
Plantain Chips:
1) Peel the plantains with a knife.
2) Using a Mandoline or with a sharp knife, slice the plantains lengthwise.
3) Heat the oil to 350 to 375F.
4) Add plantains to the hot oil; be careful not to overcrowd to keep them from sticking together.
5) Fry until the chips get a golden color.
6) Remove the chips from the oil and drain on paper towels.
7) Sprinkle with salt and let them cool down.
