Green Papaya, Red Papaya and Coconut Salad

This is the type of recipe that screams SUMMER!
Easy to make, light dressing and exceptionally fresh. Perfect for a day at the beach, a boat ride or even to stay home and eat healthy.

INGREDIENTS

1/4 Pc Green Papaya

1/4 Pc Red Papaya

1 Pc Pink Guava

1 Pc Coconut Dry

1 Pc Lemons

1 Tsp Salt

DIRECTIONS

1) With the lower part of a heavy knife, over a bowl with a strainer, hit and cut along half of the voconut. When it’s finally cracking, drain the water into the bowl.

2) With an oyster opener or a very hard short knife, remove slowly the coconut fruit from the skin and chop. Save the skins for later.

3) On both papayas, scoop out the seeds, peel and cut thin slices.

4) Peel the guava, cut in half and with a small knife remove the seeds. Slice in thin pieces.

5) In a bowl, mix the papayas, guava and coconut with the 2 Tbsp of coconut water, lemon and salt.

6) Serve the salad in the coconut shells.
