- 1/2 cup papaya
- 1 mango
- 2 oz. golden berries
- 1 dragon fruit
- 1 banana
- 1 oz. agave
- Crushed ice
DIRECTIONS
- Peel and cut the mango in thick slices.* Cut 1 slice in cubes and reserve for garnish.
- Cut the papaya lengthwise, remove the seeds with a spoon. Then cut the ends and peel it by placing it standing up on the chopping board. Cut in 1/2” cubes. Reserve 8-10 cubes for garnish.
- Peel the dragon fruit and cut it into 1/2” cubes. Reserve 6-8 cubes for garnish.
- Cut the golden berries in halves.
- Excluding the ones reserved for garnish, put all the cut fruit in a blender with ice and make a puree at high speed. Once ready, pour into your bowl and let sit in the freezer for at least 2 hours.
- Garnish with the previously reserved fruits plus banana slices. Drizzle with agave and enjoy!
Chef’s Note:
*To cut a mango; first make a cut on the bottom so the fruit is able to stand. And then cut to remove the top part of the fruit. Then, from bottom up peel the mango removing only the skin. Once all skin is removed, cut from top to bottom, following the seed path.
