Tropical Scalloped Roots Casserole

A comforting casserole of boniato, eddoes, and yuca with cream, cheddar, and thyme.

INGREDIENTS

1 pc Red Guava

1 lb. Boniato

1/2 lb. Eddoes

1 lb. Yuca

3 Cups Heavy Cream

1 Block Cheddar Cheese

1 Medium Onion

Salt & Pepper

Fresh Thyme

DIRECTIONS

1) Pre-heat oven to 350F.

2) Thinly slice yuca, boniato & eddoes; hold in water.

3) Sauté onion & garlic in butter with salt and pepper.

4) Add cream & thyme; gently simmer (do not boil).

5) Remove thyme; cool slightly and mix in half the cheese.

6) Butter baking dish; mix roots with cream.

7) Arrange roots upright; pour remaining cream.

8) Top with cheese, cover, bake for 40 minutes.

9) Uncover, add more cheese; bake 10 minutes until golden.

10) Rest 5 minutes; garnish with cheese & thyme.
