Tropical Stuffed Turkey Breast with Stuffing

INGREDIENTS

1 pc. Turkey Breast

1 pc. Mango Tommy

1″ pc. Ginger

1 pc. Italian Sausage

1/2 White Onion

1 pc. Celery Stick

1 pc. Malanga Blanca

1 Slice Sourdough Bread (or any croutons)

1 Papaya Solo or 1/4 Maradol

1/2 Cup Honey

4 Tbsp Butter

1 Tsp Dried Basil

1/2 Cup Water

Salt & Pepper

 

DIRECTIONS

1) Pre-heat oven to 350F.

2) Cube bread and toast 5 minutes to make croutons.

3) Cut a pocket into turkey breast, season inside and out.

4) Make papaya glaze: simmer papaya, honey, butter, basil and water; blend and cool.

5) Dice mango, malanga, ginger, onion and celery.

6) Sauté vegetables; add sausage and cook until done.

7) Season, add croutons and butter, mix and cool.

8) Stuff turkey and secure with toothpicks.

9) Brush with glaze; bake for 15 minutes.

10) Glaze again, bake 10 minutes – repeat twice.

11) Rest before slicing; serve with gravy or extra glaze.
