Tropical Mix Ceviche

This refreshing ceviche combines sweet dragon fruit, creamy avocado, zesty ginger, and crisp onions for a tropical explosion in every bite — all ready in just 10 minutes.

INGREDIENTS

1 pc Dragon Fruit

1 Avocado

1/2″ pc Ginger

1 pc Red Onion

8 oz Fish or seafood of your choice (recommended Salmon, Mahi, Tilapia, Trout, Corvina or Blanched Shrimp)

2 pc Lime

1 tsp Salt

Optional: Chop 1 oz of cilantro and mix the ceviche. Save some to use as garnish.

DIRECTIONS

1) Peel and cut the dragon fruit into ½” cubes.

2) Cut the avocado in half around the pit, remove it and make squares cuts
into the fruit. Remove from the skin with a spoon. Place it in a bowl.

3) Peel the ginger and shred with a grater into the bowl.

4) Add the juice of 2 limes, and salt.

5) Cut the fish in cubes the same size as the dragon fruit.

6) Cut the red onion in brunoise (very small cubes).

7) Combine the fish, dragon fruit and onion with the dressing.

Chef’s Tip:

If using cooked seafood, such as shrimp or scallops, add the juice of one squeezed lime.
