Yellow Yam

Fun fact: Usain Bolt (the greatest sprinter of all time) was known to eat yellow yams while training, dubbing this a “miracle veg” that powered him to win 3 gold medals in the Beijing Olympics. Grown in subtropical regions, this nutrient rich root vegetable is the perfect addition to any meal. Yellow yam is named after its yellow flesh, a color caused by the presence of carotenoids. The yellow yam has a longer period of vegetation and a shorter dormancy than white yam and are often mixed up with sweet potatoes. Yams have a unique taste in that they are less sweet and starchier than their root counterparts.

  1. Peel the skin and cut into medium sized 1” thick pieces.
  2. Boil for 30 minutes or until tender.
  3. Add salt. (Optional)

Use right away. Store at room temperature for 5-7 days. Cooked yams will last for 3-5 days in the refrigerator. Cooked yams can be individually wrapped and placed in an airtight container to be frozen for up to 10-12 months.
