As Celia Cruz sang, “AZÚCAR!”

Sugarcane

Sugarcane thrives under the South Florida sunshine. Also known as caña or cane sugar, sugarcane is a tropical grass known for being more than just a sweet treat. Sugarcane are stout, fibrous stalks that are rich in sugar and can measure 6 to 19 feet in height. Did you know that sugarcane is the source of about 80% of the world’s sugar supply? They are crushed to extract the inside juices that are processed into sugary goodness, from refined white sugar to brown sugar and molasses.

J&C Tropicals carries green and purple varietals.

  1. Raw sugarcane stalks can be chewed as a snack. Cut off and discard the tough skin first!
  2. Make sugarcane juice from the sweet juice inside the stalk.
  3. Boil pure sugarcane juice until it becomes a thick syrup to make candy.

Rinse the outer bark and dry thoroughly before storing. Wrap the stalks in the fridge for up to 2 weeks. Frozen sugar cane can last a few months.
